The golden beech tree in my own backyard, the pleasure of knitting and books, the gentle expression of an almost grown puppy, hot, baked oatmeal on a frosty morning--simple gifts of home.

Every autumn we make it a challenge to see how long we can go without turning on the heat. One year we made it all the way to Thanksgiving! There was a hard frost last night, and this morning the house was cold. But, I knew it was going to warm up to almost 60° in the afternoon--we would not turn on the heat today. To take the chill off the house, I made baked oatmeal. I may have shared this recipe before, but it bears repeating. Make it to your own taste: you can add dried or fresh fruit, nuts, spices, whatever you like. You can also use other grains for a different texture. I've used Hodgson Mill's multi-grain cereal with quinoa and flax seed with excellent results.

Baked Oatmeal
3 cups rolled oats or other cereal grains
3/4 cup brown sugar
2 teaspoons baking powder
2 eggs
1/2 cup oil (you can substitute all or part applesauce)
1 cup milk
Any fruit, nuts, or spices you wish

Mix all ingredients and pour into a greased 8x8 pan. Bake in a 350° oven for about 30 minutes. Serve hot with butter.

  1. What a lovely recipe, we will have to try it here although it's spring of course ... still a little cold, though. I am impressed at how tidy and clean your house is despite five children and two dogs. I feel I now have no excuse for the mess of mine!

  2. Today I baked the cookie recipe you shared, so, so good Susan, I keep grabbing one every time I walk through the kitchen.
    I only heat with the woodstove and never turn the central heat on, oh no!

  3. Beautiful photos! That's a good way to warm up the house ~ turn on the oven and bake something!! I do that too. We like baked oatmeal too. :-)

  4. I love Longfellow. I just found out he attended my church in the summer time. I even saw the pew he sat in. Your baked oatmeal sounds delicious I am going to try that.

  6. We've had the heat on for quite some time, I think you have a stronger resolve than me :) I thought of you while I was up in your area, unfortunately I knew we had no time at all for me to visit with friends. The visit was too too short, but I did get to spend some quality time with my son!!

The color of your yarn is one of my favorites.........good luck to the owner who winds up with the hand knitted items.   10. What a lovely way to stay warm and cosy. I love porridge and have all the ingredients to make this for breakfast tomorrow. This will make a nice alternative. Thank you for sharing.

  11. I'm back...We had your baked oatmeal for breakfast this morning and it was a treat. Loved it...I prepared it last night and left in the fridge so I could pop it in the oven this morning while making coffee. It was delicious and will be regularly on the breakfast menu from now on.

  13. I'm going to try that recipe. I'm not a fan of cooked oatmeal...it's a texture thing.

    We are still running the A/C so definitely no heat here!
